The pressing machines, which operates at a constant temperature to avoid overheating the oil and which processing do not exceed the 24 hours, and a custom developed computer system give OL.MA complete traceability of the product.
We reserve the same treatment to all members and we work their batches separately because we think that traceability is a value.The genuine qualities of extra virgin olive oil, guaranteed by all the olive growing farms and members, are heightened by the strict, modern and rational monitoring systems effected during the various stages of pressing, conservation and bottling.
The correct application of only the best processing methods, and the certification of product quality is guaranteed by the intervention of various independent bodies whose task is to supervise even the smallest detail of each single stage of the production process.
