The old Madonnino mill is now a modern business, able to leverage the combination of tradition and technology allowing itself to be included in a contemporary market, marked by an offer already segmented and widely varied and further refined by the introduction of PGI (italian IGP – Protected Geographical Indication) and Organic (bio) oil.

Tradition and Technology

We wanted that tradition could benefit from the technology: the good result starts from the care of the land.

The harvest process is carefully made with traditional techniques respecting to the nature of the fruit that characterizes the oil.

The pruning of olive trees and the traditional manual harvesting is enhanced by a harvest service and workmanship in the mill that does not exceed 24 hours.

Constant temperature pressing machineries are a new processing method for not "attacking" the quality of our fruit.

All partners have the same treatment and the parts are processed separately because traceability is worth.

OLMA technology lives in balance with tradition in order to ensure and enhance the quality of the product and its specific features that the world recognizes us.

In the early 70s was born, the company OLMA, as a cooperative of Tuscan olive growers, that has its roots in the land that surrounds it: the Maremma.

The old mill Madonnino was the base for the start of the oil production well known as the business card of our land: the extra-virgin olive oil.

From the original simple structure, over time the company has expanded, creating a cooperative known for its attention to respect for the tradition and culture of Tuscan olive oil.

The attention to the resources of the territory in which it produces and the constant efforts for a harmonious balance between tradition and technology shows what has always been the strength of this company.
